Aniseed For Shortbread

Asked by craig74. Answered on 1st August 2020

Full question

Hi Nigella and Team. I was hoping to make Aniseed Shortbread from Nigellissima. In my local search for aniseeds all I have been able to find is a product described as "whole aniseeds". Is this the same thing? Or should I be looking for a different product? Thank you!

Our answer

Nigella's Aniseed Shortbread (from NIGELLISSIMA) is a shortbread studded with aniseed. Whole aniseeds are the correct ingredient and sometimes they may be labelled as whole anise. They are small black seeds that are slightly teardrop shaped, with a very fine stalk.

The seeds should not be confused with star anise, which is a different, milder spice. And for the shortbread you should not use ground aniseed as the seeds provide small bursts of slightly liquorice flavour, whereas ground aniseed would disperse within the shortbread dough.
