Nigella's Calvados Syllabub (from HOW TO BE A DOMESTIC GODDESS) is a sweet and airy dessert made with whipped cream, sugar, dry cider and calvados.

Calvados is a strong liqueur that is distilled from apples. It is often refered to as "apple brandy". Usually dry cider is distilled and then aged in oak barrels for a minumum of 2 to 3 years (depending on the region) but can be older. Calvados comes from Normandy in France and is protected under AOC rules. Apple brandy can be made in other cider-producing areas, but has to be labelled and sold as apple brandy.
