Do you think the sauce from the Sicilian Pasta With Tomatoes, Garlic and Almonds would freeze ok? Thank you.
Our answer
Nigella's Sicilian Pasta With Tomatoes, Garlic And Almonds (from NIGELLISSIMA) has a no-cook sauce made from cherry tomatoes, garlic, golden sultanas (golden raisins), almonds, anchovies and capers. The ingredients are blitzed together in a food processor and then tossed into freshly-cooked pasta, along with little of the pasta cooking water.
Leftover sauce will keep in an airtight container in the fridge for up to 3 days. There is no particular reason why it should not be frozen, but our concern would be that it loses a little of its vibrancy when it thaws. It may also separate slightly when it thaws, though it should come back together when it is tossed with the pasta and cooking water. However, as the sauce is very quick to make and it is easy to scale down the quantities, we would prefer to make the amount you need just before using, whenever possible.
