Is it possible to make the Chocolate Banana Muffins as mini muffins? How would I alter the cooking time and temperature?
Our answer
Nigella's Chocolate Banana Muffins (from KITCHEN) are a darkly elegant form of muffins and an excellent way to use up over-ripe bananas. The mixture can be baked into mini muffin form and as a rule of thumb, you usually get about 3 mini muffins to 1 regular muffin. So the recipe should make approximately 36 mini muffins.
We would suggest baking the mini muffins in small paper cases (paper cups) unless you have really good non-stick mini muffin pans. You can still bake the muffins at 200c/180c fan/400F and they should take 8-10 minutes, or until a cake tester inserted into the centre of the muffin comes out clean. You can also reduce the oven to 180c/160c fan/350F and bake for 10-12 minutes, but this will produce muffins with a slightly flatter top. If you are using a silicone mini muffin pan then the baking time may be different.
