Full question
I’ve been making the Old Fashioned Chcolate Cake for years and it’s brilliant, but I’ve always eaten it without icing. Can I make the icing using just 150 grams of icing sugar? Thank you!
Our answer
Nigella's Old Fashioned Chocolate Cake (from FEAST) has layers of soft chocolate sponge that are sandwiched and coated with a chocolate icing that has a slight tang from sour cream balancing the richness.
The icing is made using melted dark (bittersweet) chocolate and Nigella prefers, if possible, to use a good-quality chocolate with at least 70% cocoa solids. It also includes 300g (3 cups) icing (confectioners') sugar. In our opinion, this amount sugar is neede to offset the bitterness of the chocolate and give the icing its luscious, fudgy taste. In addition, the icing could become too runny if you don't use enough icing sugar. You could of course try using 150g of the icing sugar when making the icing, but we suggest that you have an extra 150g of icing sugar on standby, to add if the icing needs more sweetness or needs to be thicker.
