Could the Sticky Chocolate Pudding be made with gluten-free flour?
Our answer
Nigella's Sticky Chocoloate Pudding (from HOW TO EAT) is a self-saucing pudding. That means that the sauce ingredients are mixed together and poured over the sponge batter before the pudding is put in the oven. As the pudding bakes the sponge rises up and leaves a thick chocolate sauce on the base of the pudding.
We suspect that you could use gluten-free plain flour (or a gluten-free all-purpose flour blend), but would suggest using a blend that is designed specifically for baking. The sponge batter already includes ground nuts, which can help slightly with the texture, but please bear in mind that the texture of the gluten-free sponge will be closer and less "spongy" than if it was made with wheat flour. The sauce may also be very slightly thinner, but this should not affect the pudding overall. However, we would mention that as we have not made the pudding ourselves with gluten-free flour, we are unable to guarantee the results.
