Full question
Can I stuff the boneless turkey crown with the Cornbread, Cranberry and Orange Stuffing or the Gingerbread Stuffing, or are they the wrong consistency and really only suited for cooking in a dish? I need a non-sausagemeat idea for a Thanksgiving dinner!
Our answer
Nigella's [Turkey Breast Stiffed With Italian Sausage And Marsala-Seeped Cranberries][https://www.nigella.com/recipes/turkey-breast-stuffed-with-italian-sausage-and-marsala-steeped-cranberries] has a boneless turkey breast that is opened out, filled with an Italian sausagemeat stuffing and then rolled up, tied and roasted. A turkey crown is a turkey breast that is still on the bone and once the bones are removed, just the breast meat and skin remain.
The Gingerbread Stuffing contains quite a lot of bacon, so we are not sure that you would be able to use this stuffing if you can't use sausagement. But if you can use bacon then it probably could be used for stuffing the turkey breast. The Cornbread, Cranberry And Orange stuffing might be suitable if you make sure that you use cornbread crumbs and not cornbread cubes. It will need to bind together very well before you put it on the opened-out turkey breast, so make sure that you have mixed it thoroughly and add a litte extra beaten egg if necessary. Neither of these stuffings will set as firmly as sausagemeat once cooked, so they may crumble slightly when you slice the turkey. You could also try smearing the inside of the turkey with a herb and garlic butter before rolling it up and tying it, if you can't find a suitable stuffing. However, please note that as we have not tried the turkey breast with alternative fillings, we are unable to guarantee the results.
