For the Saffron Scented Chicken Pilaf recipe, could I use brown basmati rice insead of white? Would I have to partially cook the rice first?

Our answer

Nigella's Saffron Scented Chiicken Pilaf (from NIGELLA SUMMER) has fragrant rice tossed with marinated and grilled chicken. The recipe uses white basmati rice, but you could substitute brown basmati rice instead.

Brown basmati rice does not need to be pre-cooked for the dish, but brown rice does have a longer cooking time than white and usually takes 20-25 minutes or check the packaging for the recommended cooking time. Melt the butter and add the rice, then add the saffron and other ingredients and cook, using the timings on the packaging, until the rice is tender. Keep an eye on the pan as the rice cooks, as you may need to add a little extra liquid (water or weak stock) due to the longer cooking time.
