Can I use green split peas instead of yellow split peas in the Split Pea Soup with Chilli, Lime and Ginger?
Nigella's Split Pea Soup With Chilli, Ginger And Lime (from SIMPLY NIGELLA) livens a more traditional soup ingredient with the fresh and spicy flavours of chilli, lime and ginger. Split peas are a useful storecupboard standby for soups and dals.
Green split peas are a slightly different variety to yellow split peas and are sweeter and slightly less starchy. However, they are often used for soup and we suspect that they could be used for this soup, but you may find that it doesn't thicken quite as well. You may need a little extra lime juice to offset the extra sweetness, just taste and adjust according to your own preference.
