Can The Risotto al Ragu Be Oven Baked?

Full question

For the Risotto al Ragu, Is it possible to add the rice together with the stock to the meat sauce and bake in the oven? If so what temperature, for how long and covered or not. Many thanks look forward to hearing the verdict!

Our answer

Nigella's Risotto al Ragu (from KITCHEN) has a rich meat sauce that is then turned into a risotto by adding the risotto rice for the last part of cooking. It is only the rice cooking part that is particularly labour intensive, but it can be rewarding as the savoury smell of the risotto fills the kitchen.

We would not particularly recommend oven baking the risotto . Oven baking does not release the starches in the rice in the same way as stirring a risotto does and it is much more difficult to control the amount of extra stock that is added and also when to finish cooking the rice. In our experience, it is easy to overcook the risotto rice when it is in the oven, so if possible we would rpefer to finish it on top of the stove.
