Nigella's Chicken Schnitzel With Bacon And White Wine (from NIGELLA EXPRESS) sautes bacon and then chicken escalopes quickly in a frying pan and then serves them with an easy pan sauce. Escalopes are thin, boneless pieces of meat that cook quickly.
It is quite easy to make your own chicken escalope from a skinless, boneless chicken breast. Cut the chicken breast in half horizontally (not quite cutting through completely) and open out the cut breast like a book. Put the chicken breast on a piece of baking parchment (parchment paper) and cover with a second piece of parchment. Beat the chicken breast with a mallet or a rolling pin (or you could use a small, heavy saucepan) until it is an even thickness and approximately 3mm (1/8 inch) thick.
