Chilli Jam With Yellow Peppers
Asked by vivS. Answered on 29th September 2015
Full question
Hi! I have a number of yellow Cheyenne peppers and want to make Chilli Jam with them. Would you suggest using yellow capsicum peppers instead of red in the receipe?
Our answer
Nigella's Chilli Jam (from Christmas and on the Nigella website) is made with red chillies and red capsicum (bell/sweet) peppers. This is partly for the festive colour. If you are using yellow chilli peppers then it would be possible to use yellow capsicum peppers instead, for a yellow jam. Or you could use a mixture of red and orange capsicum peppers with the yellow chillies to give a multi-coloured jam.
We would however avoid using green chillies and capsicum peppers for the jam as these tend to discolour during cooking. We feel that a khaki-coloured chilli jam would not have the same appeal as the vibrant red, or sunny yellow.
