Chocolate Peanut Squares

Asked by misskitka. Answered on 11th September 2017

Full question

In the ingredients list for Chocolate Peanut Squares it includes 'dry roasted salted peanuts'. Most dry roasted peanuts are covered in a spice mix. Do you mean this type of peanut, or should I source dry roasted just with salt (which I've not seen for sale in the supermarket)?

Our answer

Nigella's Chocolate Peanut Squares (from NIGELLA SUMMER) are shortbread biscuits, covered with a peanut caramel and topped with a layer of chocolate. The peanuts are mixed in with the caramel layer to add a salty edge and nutty crunch. In the original recipe Nigella does suggest using dry roasted peanuts. The recipe was first published over 15 years ago and at that time the peanuts were mildly spiced and less greasy than regular roasted peanuts.

However some dry roasted peanuts now have a fairly thick coating of spices and may be a little too strong in flavour. If this is the case then we suggest using regular roasted, salted peanuts instead. However they do need to be salted as the salt helps to enhance the buttery flavour of the caramel.
