Chocolate Sponge Pudding Steaming Times

Asked by pennydue. Answered on 30th October 2017

Full question

For the steamed Chocolate Pudding for Christmas Pudding Haters Nigella suggests the full recipe for a 1.7l/3 pint pudding basin, but for a half the quantity of ingredients to use a 600ml/1 pint basin. How long do I cook the smaller version of the pudding for? Thanks.

Our answer

Nigella's Chocolate Pudding For Christmas Pudding Haters With Hot Chocolate Sauce (from NIGELLA CHRISTMAS) is a steamed chocolate sponge that can gently cook while the main Christmas meal is being served and is a good alternative for those who do not like the traditional Christmas pudding.

The large pudding is steamed for 1 1/2 hours and for the smaller pudding we would suggest steaming it for at least 1 hour, though it could take 1 1/4 hours. Steaming is a particularly gentle form of cooking so it is better to err on the slightly longer side for cooking and the pudding will not spoil if it has an extra 15 to 30 minutes cooking. The sauce can be made in advance and then gently reheated in a heatproof bowl over a saucepan of hot water, stirring frequently, or in very short bursts in a microwave, stirring in between each burst.
