Courgette Fritters Without Cheese

Nigella's Courgette Fritters (from NIGELLA SUMMER) are small vegetable pancakes that are flavoured with mint and parsley. They include crumbled feta cheese for a creamy, saline hit. We believe that the fritters taste best if the feta is included, though it would be possible to omit it.

If you have to omit the feta cheese then it should not affect the batter mixture too much, as feta will not add a lot of extra moisture. However as the feta adds some salt you may wish to season the batter a little more generously. You can always fry a teaspoon of the mixture, let it cool a little and then taste it to see if the fritter batter needs more salt, before you cook all of the fritters.
