Devil's Food Cake in a Processor

Asked by jack2k6. Answered on 22nd April 2013

Full question

Hi, I've recently been diagnosed with arthritis and find it hard to cream butter and sugar so I'm wondering is it possible to convert Nigella's recipe for Devils Food Cake?

Our answer

Nigella's Devil's Food Cake (from Kitchen) can be made by hand, though generally Nigella makes it in a freestanding mixer which should be suitable if you are having difficulty holding spoons for creaming. The cake can also be made using an electric hand mixer if this suits you.

It should also be possible to make the cake in a food processor but as there is a reasonable amount of batter you should use a food processor with a good sized bowl. Food processors are usually best for making cakes via "all in one" method but you can also use them for making cakes with a slightly more classical method. We would mix the butter and sugar in the processor first then add the other ingredients in the order suggested in the recipe method. The liquid ingredients can be added via the feeding funnel. To add the flour mixture stop the processor, remove the lid and add the flour, replace the lid and pulse the processor to mix the flour in. For the cocoa mixture add it though the funnel and use a low speed or pulse the processor as you go. You may also need to scrape down the sides of the food processor bowl once or twice as you make the cake.
