Nigella's Lemon Polenta Cake (from KITCHEN) is a moist and citrussy gluten-free cake that is popular with everyone. It contains both polenta and ground almonds, with the almonds giving the cake both moisture and texture.

In the UK ground almonds are made with blanched (skinned) almonds. This would be most commonly known as almond flour. However, in some countries it is difficult to find almond flour or it is extremely expensive. Almond meal is also made from ground almonds, just with their skins on rather than blanched. This can be easier and cheaper to buy in some non-UK supermarkets than almond flour and we find that it works just as well for the majority of recipes, so we tend to put it in the ingredients list. However, you can use either almond flour or almond meal, according to what is available in your area and within your budget.
