Hi, sometime ago I watched a show where Nigella cooked some duck legs and potatoes in a pan in the oven. I saw only patches and would love that recipe please. It was all done in a pan and in the oven. Thank you! Andre.
We suspect the recipe you are referring to is Roasted Duck Legs And Potatoes from Nigella's book Kitchen. It was featured in the TV show of the same name. Unfortunately the recipe isn't currently available on Nigella's website but can be found in the book on p388. If you are in the US then it is also available on the Food Network website.
The duck legs shuld be cooked in a fairly robust medium-sized roasting pan (Nigella uses a tart tatin pan). As cast iron skillet or medium-sized frying pan with an ovenproof handle would also be good. The pan does need to have sides on it, rather than a lipped baking sheet, as the duck legs will render a fair amount of fat during the cooking process. As the cooking time is also quite long, though fuss-free, it is worth rotating the pan once or twice to ensure that the potatoes cook evenly.
