Freezing Apple Puree For Apple And Almond Cake

Hi, we have lots of apples on our trees at the moment and I was wondering if it would be possible to make and freeze the apple puree for the Apple And Almond Cake now, ready for use in a couple of months time -maybe as a Christmas dessert. Thank you

Our answer

Nigella's Apple And Almond Cake (from FEAST) is a moist cake that is gluten-free and dairy-free. The base of the cake is apple puree, which is made from 3 sharp apples (or use 285g/generous 1 cup ready made puree).

Apple puree freezes very well and we would suggest that you freeze the puree in 285g portions, so that you don't thaw more than you need for the cake. Put the puree in an airtight container and freeze for up to 3 months (which, at time of writing, will take you beyond Christmas). Thaw the puree overnight in the fridge then take it out 1-2 hours before making the cake so that the puree has a chance to come to room temperature, as the ingredients for the cake should all be at room temperature so that they mix together properly.
