Freezing Chocolate Lime Cheesecake

Full question

Is the Chocolate Lime Cheesecake O.K. to freeze? Love the recipe but it is too much for my husband and I. Somehow not as nice if you make half recipe in smaller tin.

Nigella's Chocolate Lime Cheesecake (from NIGELLA BITES) is a baked cheesecake and this type of cheesecake usually freezes very well as long as it has been made with full fat cream cheese (rather than a "light" or reduced fat cream cheese).

It sounds as if it would be most practical to freeze the cheesecake in individual slices, so that you can remove them and eat them when desired. Put the slices on a baking sheet lined with baking parchment (parchment paper) and freeze until solid. Once the slices are solid, wrap each one in a double layer of clingfilm (plastic wrap) and put in an airtight container. Freeze for up to 1 month. To thaw the slices, unwrap them and put on a plate, loosely cover with fresh clingfilm then leave in the fridge overnight.
