Freezing Mini Meatloaves

Can the mini meat loaves be frozen - either after they've been formed but not baked or after baking? Thank you.

Our answer

Nigella's Mini Meatloaves (from NIGELLA EXPRESS) are individual meatloaves that are free-formed, rather than being baked in a loaf tin. It is possible to freeze the loaves either before or after cooking. If freezing uncooked, shape the meatloaves and put them on the lined baking sheet, as directed in the recipe, then loosely cover the baking sheet with clingfilm (plastic wrap) and freeze until the meatloaves are solid. Transfer the frozen meatloaves to an airtight container, putting baking parchment (parchment paper) in between the layers of meatloaves if you need to stack them in the container, and freeze for up to 3 months. Before baking you must thaw the meatloaves completely, so we suggest transferring them back to a parchment lined baking sheet, covering with clingfilm and leaving in the fridge overnight. Bake following the instructions in the recipe.

To freeze cooked meatloaves, let them cool and then refrigerate (within 2 hours of baking) until completely cold. Wrap each mini meatloaf in clingfilm and put in an airtight container or tightly sealed freezer bag and freeze for up to 3 months. Defrost overnight in the fridge before eating.
