Freezing Panettone Stuffing Squares

Hello, and Happy Holidays! Is it possible to make and freeze the stuffing squares now and serve it on Christmas? I've never made a stuffing this far in advance, nor have I ever frozen one! I'm mainly concerned about the chestnuts, i.e. how well they will freeze and thaw. Thank you so much! Allan

Our answer

Nigella's Pannetone Stuffing (from Nigellissima and on the Nigella website) mixture can be made in advance, and can also be frozen. Cooked, peeled chestnuts freeze very well. You can cook the vegetable mixture, let it cool and add the chestnuts, lemon and pannetone. At this point the mixture can be transferred to an airtight container and kept in the fridge for up to 2 days, or frozen for up to 3 months.

If you are freezing this mixture then let it thaw overnight in the fridge before using. When you are ready to cook the stuffing, mix in the beaten eggs, transfer the stuffing to its dish and bake for 25 to 30 minutes (so it should be able to bake while the turkey is resting).

Leftovers should be refrigerated as quickly as possible (and within 2 hours) and eaten within 2 days.
