Nigella's Fish Finger Bhorta (from COOK, EAT, REPEAt) is a spicy mixture of crisp-coated fish fingers, wilted spinach and pink pickled onions. The ingredients suggest baby leaf spinach as it is young and tender, so there is no need to tear out any tough stems.

We would prefer not to use frozen spinach because of the extra liquid that generally comes from frozen spinach, which will soften the crisp fish finger coating. You could just omit the spinach completely as this was Nigella's own addition to the dish. Otherwise, you could use more herbs or other leafy vegetabes or even some leftover cooked vegetables.
