Nigella's Roly Poly Pudding (from NIGELLA EXPRESS) is made with golden syrup. This is a thick syrup that is formed as a by-product of processing sugar cane into sugar. The best-known brand is Lyle's. It is very sweet but doesn't have much other flavour so can be good for cooking.

The Roly Poly pudding uses 240g (3/4 cup) of golden syrup and we would suggest using either light corn syrup (syrup de maiz) or light agave syrup as alternatives. Maple syrup and honey are both sweet but they have quite individual flavours that would be too strong for the pudding.
