Gooey Chocolate Stack

Asked by DavyS. Answered on 24th September 2015

Full question

Hello, I tried to make the Gooey Chocolate Stack from the book How To Be A Domestic Goddess. My copy is a Dutch edition. I followed the steps in the book to make the merengue parts. They failed, they did not rise and the "cream" wich needed to be diveded in three layers sunk when I added the cocoa and red wine vinegar. I looked up the recipe on the website and I noticed that the ingredients are different in quantity. In my book it says 100 grams of sugar and on the website it says 300 grams of sugar. Is that why my layers failed? Do I need to check all of the recipes on the website? I hope to hear from you, Greetings Davy Storms

Our answer

Nigella's Gooey Chocolate Stack (from Domestic Goddess and on the Nigella website) is made from 3 discs of chocolate flavoured meringue. The meringue is made with 6 egg whites and 300g (1 1/2 cups) caster (superfine)sugar and this is a fairly niral amount of sugar for the volume of egg whites (it is usually 50g/1/4 cup sugar per egg white). So 300g sugar is the correct amount.

We are checking with the Dutch publishers on this issue, especially as the other international editions seem list the correct amount of sugar for the meringue. However we would note that the recipe lists an extra 100g (1/2 cup) of caster sugar for the chocolate custard filling. The ingredients list in the book is split into two columns and the 100g caster sugar (for the custard) is at the top of the second column, to the right of the egg whites. We are just wondering if you may have inadvertently read across the two columns, rather than down each column individually. However if there is a printing error in your edition then we sincerely apologize and will rectify this as soon as possible. Also as far as we are aware the Dutch edition should be correct for other recipes.
