Sweet Orange Chilli Sauce

Wash chillies and remove any stems Place in a sauce pan Zest the oranges and add zest to chillies Juice the oranges and add to the pan Add enough white vinegar to cover chillies Heat and let simmer until chillies are cooked and soft Remove from heat and let cool Blend in blender about 2 cups at a time until smooth Put in mesh strainer and work with spoon to remove skins and seeds......save skins and seeds! Once done spread out seed mash on cookie sheet to dry. once dry the mash can be ground in a coffee/nut grinder for a wonderful chilli powder

Serves: a bottle
- ½ pound red chiles (or yellow but not green, choose a chilli that suits your fondness for heat)
- 2 oranges
- ½ cup sugar (or to taste)
- 3 teaspoons salt (approximately)
- 2½ cups white vinegar
