Grasshopper Pie Base

Hello, Nigella uses Bourbon Biscuits for her Grasshopper Pie. I am only able to source Bourbon Creams in South Africa and wondered if they are the same thing? I suppose I could scrape all of the cream off the biscuits but am hoping that this won't be necessary. Thank You. Jenny Landey

Our answer

Nigella's Grasshopper Pie (from Kitchen) and My Brandy Alexander Pie (on the Nigella website) both use a biscuit crumb base that is made from bourbon biscuits. We suspect that UK bourbon biscuits are the same as the bourbon creams that you mention from South Africa, as the UK biscuits are sandwich biscuits, with a chocolate cream filling. You do need the chocolate cream filling the help to bind the mixture together.

If you cannot get bourbon biscuits or bourbon cream biscuits then Oreo Chocolate Creme cookies are a good substitute. If you can't get the chocolate creme version then regular Oreo cookies (not the double stuff version) can be used and you can add a teaspoonful of cocoa powder to the mixture when you crush the cookies in the food processor.
