Our answer

Nigella's Apple And Cinnamon Muffins (from KITCHEN) are muffins that are gently spiced and studded with apple and almonds. The muffins are sweetened with a combination of sugar and honey. The honey adds a little flavour but is also important for keeping the muffins soft and moist, as honey is hygroscopic and attracts moisture.

If you need to replace the honey with something else then we would not recommend a crystallized sugar as an alternative. Maple syrup is popular but it is not as viscous as honey so we are not sure that it would be a great alternative. Instead we would suggest using agave syrup as this is almost as thick as honey and has a similar level of sweetness so you can just use it in the same quantities. However, as we have not tried this as an alternative we are unable to guarantee the results.
