Nigella's Chocolate Sheet Cake would normally keep for 5 to 7 days if it is tightly covered and kept in a cool place. However, as it is quite a moist cake, it will spoil more quickly if it is in a very warm environment. We would suggest keeping the cake at room temperature, tightly covered, for one to two days and in the fridge for up to 5 days.

If you have to refrigerate the cake then you may find that some condensation forms on the top of the icing and it is slightly more sticky, but it is still fine to eat.
