Full question

Is it possible to make the Easy Sticky Toffee Pudding in individual pudding moulds? I don't know how I would add the boiling water if I did it in small moulds.

Our answer

Nigella's Easy Sticky Toffee Pudding (from NIGELLA BITES) is a suprisingly easy pudding where you dot butter and sprinkle sugar over the surface of the sponge batter, pour over hot water and then as the pudding bakes these ingredients almost magically transform into a sauce underneath the cooked sponge. The sponge is baked in a large ovenproof dish.

Whilst it may be possible to bake the sponge in individual portions we suspect it would be easier to do this in ramekins and serve in these, rather than in pudding moulds, as we are not sure that the puddings would turn out of moulds easily. As the sauce sinks to the bottom of the mould it will likely mean that the cake part breaks up as it is turned out of the mould. It is also quite fiddly to divide the topping mixture evenly between ramekins and you may not get quite enough sauce in some portions. You should stand the ramekins on a baking sheet before adding any hot water and then put the baking sheet and ramekins into the oven. Ramekins vary in size but are usually 150-200ml (2/3-3/4 cup) in capacity so you should get 6-8 portions from the recipe. You may also like to make some of Nigella's Salted Caramel Sauce to serve alongside, in case there is not enough sauce with any of the puddings. We suspect the baking time for ramekins would be around 20 minutes. However as we have not tested the pudding in these dishes we regret that we are unable to guarantee the results.
