Irish Cream Tiramisu Without Eggs

Full question

Can Nigella's Irish Cream Tiramisu recipe be made without eggs? I want to make it for a dinner party but I know not everyone is happy eating raw eggs. Many thanks J.Owen.

Our answer

Unfortunately tiramisu made without eggs will not have quite the same texture as a regular tiramisu, as the mascarpone mixture will not have the moussey texture that comes from whisked egg whites. However raw and undercooked eggs should be avoided by pregnant women, young children, the elderly or those with a compromised immune system.

You could however use pasteurized egg whites which are sold in cartons in many supermarkets and as they are heat treated they are safe for everyone to eat. Nigella uses these in her Tiramisini recipe in Nigellissima. We would suggest using the Tiramisini recipe instead and substituting Irish cream liqueur (Bailey's) for the coffee liqueur and marsala. The Tiramisini recipe makes 4 individual portions so if you would like to make this in a 22cm/9-inch square flass dish then make double the quantity of the Tiramisini recipe and have some extra savoiardi biscuits (sponge fingers) to hand to make up two layers savoiardi in a larger version.
