Asked by Mandinka. Answered on 4th October 2017

Full question

Does it make any difference if you omit the lemon zest from the Yogurt Pot Cake? My family does not like the flavour of lemon.

Our answer

Nigella's Yogurt Pot Cake (from NIGELLISSIMA) is based on a traditional Italian recipe, called Ciambella. These cakes are usually flavoured with vanilla and lemon. However the lemon zest can be omitted from the recipe if necessary.

You may like to replace the lemon zest with the zest of half of an orange instead. If you can't find unwaxed oranges then scrub a regular orange in a little warm soapy water, rinse thoroughly and dry well before grating the zest. If not adding any zest at all then increase the vanilla extract by 1/2 teaspoon (to make 2 teaspoons total) instead.
