Liquid in Ultimate Christmas Pudding

Full question

I have just finished the first 5 hour steaming for the ultimate Christmas pudding but there seems to be cooking liquids left in the pudding basin. Will these be re-absorbed into the pudding? Other than this extra liquid it looks cooked. Thanks.

Our answer

Once the Ultimate Christmas Pudding has finished its first steaming there may be a little liquid fat on the surface of the pudding and this should absorb back into the pudding as it cools. However if there is a lot of liquid in the basin then we suspect that some steam may have found its way into the basin during the cooking process.

We suggest that you let the puding cool completely. If there is still liquid in the basin then you should be able to pour it away. We suggest that once you have drained the pudding and re-attached the lid or re-wrapped the pudding then you keep the pudding in the fridge to be on the safe side, as any extra moisture trapped in the basin could encourage mould.

When steaming the pudding for the second time make sure that you have re-wrapped the pudding tightly. If you are using a basin with a plastic lid then we suggest also overwrapping the basin tightly in clingfilm (plastic wrap) to reduce the risk of any steam seeping in.
