Nigella's Seared Salmon With Singapore Noodles (from NIGELLA EXPRESS) has salmon that is coated in a spicy rub, pan fried and accompanied by stir-fried noodles. The recipe uses medium madras curry powder, which is available in some stores and on-line. Most UK supermarkets also stock a medium curry powder, rather than medium madras, that would be a good alternative.

However the recipe is very flexible and you can use whichever curry powder is available and is to your own taste. If you prefer spicy foods then use a hot curry powder but if you prefer less heat then opt for a mild curry powder instead. You can also add a pinch of crushed, dried chilli flakes (red pepper flakes) to the noodles before serving, if you find their flavour to be too mild.
