Can you store the prepared Moonblush Tomatoes in a jar of olive oil for future use? Like the sun dried tomatoes you can buy in the shops?

Our answer

Nigella's Moonblush Tomatoes (from NIGELLA EXPRESS are slow roasted tomatoes, similar to the semi-dried tomatoes bought from a deli or from the chiller cabinet of a supermarket. Unfortunately as the tomatoes are only partially dried they need to be stored in the fridge and are not really suitable to be stored in the same way as store-bought sundried tomatoes.

Once the tomatoes have been cooked they should be carefully transferred to an airtight container and stored in the fridge for up to 5 days. You can cover them with oil if you wish, but they still need to be kept refrigerated and used within 5 days. If possible remove them from the fridge about an hour before serving, as they taste better at room temperature. We don't particularly recommend freezing the tomatoes as the texture can be slightly mushy when they thaw. But if you have leftover Moonblush Tomatoes and need to store them for longer then freeze them in an airtight container for up to 3 months. Thaw the frozen tomatoes overnight in the fridge.
