Pasta With Chicken and Sundried Tomatoes

Introduction

One of our family's favourite pasta dishes!!! Great, easy to make, tasty pasta for 2. (In our case 2 1/2) Goes well with a good verdelho.

Ingredients

Serves: 2

  • 11 ounces sliced or diced chicken breasts
  • 1 cup sundried tomatoes (or more or less if you feel like it)
  • 5 chopped button mushrooms
  • 6 fluid ounces thickened cream
  • baby spinach (leaves)
  • 1 teaspoon garlic
  • 1 tablespoon butter
  • salt (to taste)
  • pepper (to taste)
  • ¼ cup white wine
  • pasta (usually penne but bow ties are also good)

Method

  • After putting pasta on to boil, place butter and garlic in a pan on a medium heat. Melt butter and add sliced chicken pieces. Lightly brown chicken and add cream and sundried tomatoes. Simmer to reduce cream, after 5mins add mushrooms and spinach.
  • Sprinkle in salt and pepper. Cook for another 5 mins then add drained pasta and wine.
  • Simmer for another 2-3 mins or until wine has reduced.
  • Serve in big bowls with parmesan and toast some fresh garlic bread.
