I was wondering if I could substitute another kind of mushroom for the "oyster mushrooms" in Coq Au Riesling? As the oyster mushrooms are extremely hard to find where I live, and probably out of my budget. Portabella or moonlight mushrooms, maybe? Thanks so much.
Nigella's Coq au Reisling (from Nigella Express) uses oyster mushrooms as they are easy to tear up, rather than slice, making preparation a little less fiddly. Also oyster mushrooms tend to be quite soft and so cook easily in the sauce, without the need for frying first.
If you can't find the oyster mushrooms then by all means substitute whatever is in your local market. Plain white/moonlight mushrooms are suitably pale or chestnut/crimini/baby bella mushrooms would also be fine. We would suggest that these are sliced fairly thinly and if possible fry them first in a little olive oil or butter as this will help them to soften before they are added to the sauce. Heat the oil or butter in a frying pan over a medium heat and cook the sliced mushrooms for a few minutes until just softened before adding them to the chicken.
