Hello, can you do the Passion Fruit Ice-Cream cake without alcohol? I don't drink and would really love it if it was possible.

The orange liqueur does help slightly with the texture as it prevents the ice-cream cake from freezing completely solid, so it is easier to slice. However, if you prefer to make the cake without alcohol then you can omit it completely or replace it with 2 tablespoons of fresh orange juice. You may need to let the cake stand for 5 minutes out of the freezer before you slice it, as it will be slightly firmer than one made with liqueur.
