Nigella's Beef And Aubergine Fatteh (from AT MY TABLE) is an irresistible combination of crisp pitta triangles topped with spicy fried mince (ground beef) and aubergines (eggplants) and topped with a tahini cream. Aubergines have a very thin skin and this is edible, so you do not need to peel aubergines before cooking them.

Some people recommend salting the aubergines before cooking, to draw out any bitter juices. However most modern aubergines do not have this problem and are quite mild, so you should not need to salt the aubergines before frying them for the fatteh.
