Ramekins For Chocolate Babycakes

Asked by Anberlin. Answered on 28th July 2016

Full question

I would like to make the Molten Chocolate Babycakes but would like to know what size of ramekin to use. The recipe sounds perfect!

Our answer

Nigella's Molten Chocolate Babycakes (from HOW TO BE A DOMESTIC GODDESS) are molten-style pudding cakes that have a liquid chocolate centre. The cakes are often baked in individual metal pudding moulds, which are popular in the UK but more difficult to find elsewhere.

The moulds have a capacity of 170ml (2/3 cup or 7 ounces) when filled to the top and ramekins of a similar size would be a suitable alternative. The ramekins should not be too shallow otherwise the centres of the cakes will cook through too quickly. Also as ramekins are porcelain they do not heat up as quickly as the metal moulds so the cooking time for the babycakes may vary slightly. Check the cakes after 10-12 minutes, they should have a light crust but still be soft in the centre. If they still look unbaked at the edges then allow and extra minute or two in the oven before checking again.
