Roasted Red Peppers For Salad

Asked by Amie185. Answered on 30th August 2021

Full question

In the Roast Red Peppers with Pomegranate Molasses and Dukkah recipe in Cook, Eat, Repeat can I substitute bought jar roast red peppers instead of making my own? I was wondering if there was a big difference as in many other recipes Nigella uses roast red peppers from a jar.

Our answer

Nigella's Roast Red Peppers With Pomegranate Molasses And Dukkah (from COOK, EAT, REPEAT) is a delicious salad or side dish that can be made in advance. Nigella uses home-made roasted red peppers for this dish and we would prefer not to use red peppers from a jar. Nigella uses jarred roasted red peppers for ease and speed in some recipes, but more often when they are to be cooked or served warm. Peppers from a jar tend to have a softer texture than those that are roasted at home and can also be packed in water or in oil with some acid added, making them not as sweet and flavoursome as peppers that you cook yourself.

The peppers can be roasted up to 2 days ahead and refrigerated until needed. Remove the roasted peppers from the fridge about an hour ahead of serving them, to let them lose some of their chill. It is also possible to grill (broil) the peppers rather than roasting them and you can find instructions on how to do this in Nigella's recipe for Peppers With Feta And Almonds.
