The Salt And Pepper Squid was much too salty. I followed the exact directions. What did I do wrong?

Nigella's Salt And Pepper Squid (from NIGELLA BITES) coats squid rings in a seasoned cornflour (cornstarch) mixture that then fries to a crisp, slightly spicy coating. As not all of the seasoned flour will stick to the squid, not all of the salt is likely to be eaten.

The recipe calls for 2 tablespoons of Maldon salt. Maldon salt is sea salt that comes in flakes (in the US it is called "flaky sea salt") so 2 tablespoons is not that much by weight. However, if you are using fine sea salt or free-flowing salt instead of sea salt flakes then the amount should be reduced by half. Seasoning is very much a matter of personal taste, so you can also reduce the amount to suit your own palate.
