Size Of Apples In Apple And Almond Cake

Hello. I would like to make the Apple And Almond Cake. However due to the significant difference in apple sizes down here in Australia, are you able to advise what the total mass, in grams, of the peeled, cored and chopped apples is? Many thanks in advance.

Our answer

Nigella's Apple And Almond Cake (from FEAST) uses a home-made apple puree. In the recipe Nigella suggests using a tart apple, such as a Braeburn. Braeburns are medium to large sized apples and the weight per apple is about 170-200g. So the unpeeled weight for 3 apples would be 500-600g (1 pound 2 ounces to 1 1/2 pounds).

The apple puree should not be too liquid and you may prefer to measure out the puree after cooking. You will need about 285g (generous 1 cup) puree. The batter should have a soft consistency, though not completely liquid. The cake should take about 45 minutes to bake though you should check after 35 minutes as ovens vary. The cake is done when a cake tester inserted into the centre comes out clean.
