Our answer

Nigella's Home-Made Instant Pancake Mix (from NIGELLA EXPRESS) makes a large quantity of dry pancake mix that can be stored in an airtight container for up to 3 months. When ready to cook pancakes you need to make the batter by taking 150g/1 cup of the mixture and adding 1 egg, 250ml/1 cup milk and 15g/1 tablespoon melted butter.

This quantity of batter makes about 15 small pancakes, which is enough for 2-3 people depending on what is served alongside. If you want to make up a smaller amout of batter then we suggest using 75g of the pancake mix and adding 125ml milk, 1 egg yolk and 5g/1 teaspoon of melted butter. Any leftover cooked pancakes can be stored in the fridge for up to 3 days and then warmed briefly in a microwave before serving. If you don't want to make the full batch of Instant Pancake Mix then we would suggest trying Nigella's American Breakfast Pancakes. A half quanity of this recipe is enough for 2-3 people and leftovers can be stored as outlined above.
