Substitute Fruit in Apple Almond cake

Full question

It's peach season here. Could peaches be used in this cake in place of apples? I know apple sauce is sometimes used in place of fats in some recipes. Will using peaches affect the baking?

Our answer

Nigella's Apple And Almond Cake (from FEAST) uses apple puree instead of butter. The apples provide moisture and the ground almonds and eggs provide richness and leavening. We understand that it is possible to use other fruit purees in baking so we suspect that it may be possible to use peaches as an alternative. However peaches have a stronger flavour than apples, so the taste of the cake will be different.

The puree in the recipe is home made and slightly thicker than commercially produced purees. When you make the peach puree remove the skins and pits from the peaches first. You may not need to cook the peaches to puree them, but if the puree is very runny then we suggest simmering it until it has thickened and can be spooned and not poured. However we would mention that as we have not tested the recipe with peaches, we are unable to guarantee the results.
