Substitutes For Clementine Cake

Can I substitute sugar with xylitol for the flourless Clementine Cake? For a sugar free version? Thank you.

Our answer

Nigella's Clementine Cake (from HOW TO EAT) is a flourless cake made with ground almonds (almond meal), sugar, eggs and a puree of whole clementines that have been cooked until very soft. It is a popular cake as it is easy to make and keeps well, however sugar is required to offset the bitterness of the clementine peel, as well as helping to provide some structure to the cake.

Xylitol is a plant based sweetener and can be used in baking. However we understand that it absorbs a fair amount of water and could leave the cake on the dry side without adjustments to the recipe. Unfortunately we have not tried the cake with any ingredient substitutes so regret that we are unable to advise on an alternative sweetener.
