Sweet Potato Macaroni Cheese With Butternut Squash

Nigella's Sweet Potato Macaroni Cheese (from SIMPLY NIGELLA) has a cheese sauce that is enhanced with mashed sweet potatoes. The potatoes add flavour and a lovely golden colour to the sauce.

Sweet potatoes and butternut squash are similar in colour and they both have a naturally sweet flavour. Sometimes butternut squash can be a little bland if it is boiled, but it should be possible to use half butternut squash and half sweet potatoes in the sauce if you wanted to try it. However the boiling times will be different for the two vegetables and the butternut squash could take a little longer to cook. So we would suggest that you use the same saucepan of boiling salted water but cook the two vegetables separately, until each is tender.
