Our answer

Nigella's White Chocolate And Passionfruit Mousse (from NIGELLA SUMMER) has a lower layer of raspberries soaked in passionfruit juice. The raspberries will break down a little as they macerate in the juice, becoming more of a puree than individual berries, but this should not be a particular problem if the mousse is served in individual glasses. So it should be fine to make the dessert a day ahead if you don't mind this happening.

The mousse should be refrigerated as quickly as possible and will become firmer as it is chilled. You may like to take the glasses out of the fridge 30 minutes before serving the mousses, just to let them soften very slightly.
