Full question
Why isn’t there treacle in Nigella’s recipe for Easy Sticky Toffee Pudding? I would love to make it from this recipe but will it be the same as when using treacle or syrup? Thank you
Our answer
Nigella's Easy Sticky Toffee Pudding (from NIGELLA BITES) is, as its name suggests, an easy variation of the classic STP. This type of dessert is called a self-saucing pudding, where the sauce ingredients are put on top of the sponge batter, water is poured over and then as the pudding bakes the sponge rises up and the sauce forms on the bottom of the dish.
It is slightly difficult to distribute treacle or golden syrup evenly over the top of the sponge batter and using a combination of brown sugar and butter still produces a delicious butterscotch sauce that sits under the date-enriched sponge. However, if you wanted to make an extra sauce to serve alongside the Easy Sticky Toffee Pudding then you can always make the treacle-tinted sauce from Nigella's recipe for Sticky Toffee Pudding or even the Salted Caramel Sauce. However, do not leave out the step of sprinkling over sugar, dotting over butter and adding water to the top of the batter for the Easy Sticky Toffee Pudding as omitting these would affect how the sponge part of the pudding bakes.
