In the Chocolate Gingerbread recipe, it says to use a 20cm x 30cm x 5cm rectangular pan. In imperial measurements this would be equivalent to 8in x 10 in. However, when I click the US conversion on the website, it says to use a 9in x 13in pan. Is this because 8 x 10 is a less common size over here? If I have both sizes, which would you recommend. Does it even make a difference? Thanks in advance! Either way it’s a gorgeous recipe!

Nigella's Chocolate Gingerbread (from FEAST) is a sticky, moist, spiced chocolate cake that is coated with a gingery chocolate glacé icing. Nigella bakes the cake in a 20 x 30cm rectangular cake pan, which is actually equivalent to 8 x 12 inches.
In the US the cake pan sizes tend to be slightly more standardised that for the UK, hence it is suggested that a 9 x 13-inch pan is used. This is actually slightly larger than the UK pan, but easier to find and the cake also bakes well in this size pan, though the finished cake is slightly thinner and larger than the original. If you have both an 8 x 10-inch pan and a 9 x 13-inch pan then we would suggest using the larger 9 x 13 pan, simply as there is a risk that the cake batter overflows from the smaller 8 x 10-inch pan. If you have an 8 x 12-inch pan then you can certainly use this for the cake.
